Our Class Chef

Harold Ramos

Harold Ramos, of Professional Chef Services, was born in Detroit, Michigan and raised in Corpus Christi. He studied at the Culinary Institute of America, which is regarded as the premiere culinary school in the world. After graduation in 2001, Harold and his wife moved to New York City where he was employed at the world-renowned Bouley restaurant, which is known for providing one of the most extraordinary dining experiences in the world.

Harold cooked under Chef Bouley at a Chef de Partie, Entremetier, and Kitchen manager for two years. David Bouley and Chef de Cuisine, Shea Gallante, were the most influential mentors in Harold's career who have greatly shaped and molded his culinary expertise. Harold was eager to further his career by acquiring knowledge pertaining to other cuisines, which led him to 66 in 2003, which is one of Jean George's restaurants , which has earned two starts from the New York Times. He worked as a Sous Chef at 66 for two years.

In 2005, Harold was employed by Shea Gallante at Cru, who has won the honorable award "Best New Chef" by Food and Wine.Harold gained experience as a Pastry Sous Chef and Saucier Sous Chef and assisted in the execution of service and recipe development. Harold and his wife, Gloria, have moved back to Texas to fulfill their dreams of opening and operating a restaurant including full service catering in Corpus Christi. The love for food and hospitality was the motivation to create "Salad Days, LLC," while anticipating the opening of their restaurant. Salad Days gives them the opportunity to continue to create new recipes and build their repertoires.

Harold has gained invaluable experience that has been passed on from many generations of talented Chefs that have influenced the world of culinary. This deeply rooted respect for Chefs and gastronomy has led him to create his own style of preparing food. Chef Harold would like to fulfill his dream of owning a New American Bistro that is seasonal and technique driven concentrating on innovative dishes using classical techniques at an informal level. It is new and upcoming Chefs, such as Harold Ramos that are passionate about food who will continue to inspire the food of tomorrow.
